  • 1.5 lbs boneless skinless chicken thighs Juicy and tender, perfect for grilling.
  • 0.5 cup plain Greek yogurt Coats the chicken and tenderizes the meat.
  • 1 Tablespoon extra virgin olive oil Adds richness and helps in browning.
  • 2 Tablespoons lemon juice + zest Brings brightness and balances flavors.
  • 3 cloves garlic (minced) Infuses depth and earthy flavors.
  • 0.5 teaspoon onion powder Adds sweetness to the marinade.
  • 1 teaspoon dried oregano Brings Mediterranean flavor.
  • 1 teaspoon kosher salt Essential for seasoning.
  • 0.25 teaspoon black pepper Adds a hint of spice.
  • to taste fresh parsley (for garnish) Adds color and freshness.

Method

Preparation
  1. In a small bowl, whisk together the Greek yogurt, extra virgin olive oil, lemon juice, lemon zest, minced garlic, onion powder, dried oregano, kosher salt, and black pepper to create a creamy marinade.
Marinating
  1. Place the chicken thighs in a shallow dish or a sealable plastic bag. Pour the marinade over the chicken, coating each piece generously. Seal the bag and refrigerate for at least 2 hours, or up to 24 hours.
Cooking
  1. Preheat your grill or grill pan over medium-high heat.
  2. Remove the chicken from the marinade and discard excess marinade. Grill chicken for about 5-6 minutes per side or until the internal temperature reaches 165°F.
Serving
  1. Serve the chicken hot, garnished with fresh parsley.

Notes

For extra flavor, consider adding smoked paprika or cayenne pepper to the marinade. Allow the chicken to rest for a few minutes after grilling to retain juices.
