Preparation
- Preheat your oven to 325°F (163°C).
- In a large mixing bowl, mash three very ripe bananas until smooth with a few small lumps.
- In another bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- Using a stand mixer, whip together sugar and eggs on medium speed for about five minutes until light and fluffy.
- Gradually add canola oil and melted butter to the mixer, continuing to blend smoothly.
- Mix in the mashed bananas, sour cream, and vanilla extract on low speed until combined.
- Gently fold in the dry ingredients with a rubber spatula until no visible streaks of flour remain.
- Prepare a 9x5 loaf pan by buttering it, placing parchment paper inside, and buttering the parchment.
- Pour the batter into the prepared pan and smooth the top.
Baking
- Bake in the preheated oven for about one hour. Check if it is jiggly; if it is, continue baking in 10-minute increments until set.
Notes
Tips: Use very ripe bananas for optimal sweetness. Consider adding nuts or chocolate chips for added crunch. Avoid over-mixing to keep the bread light and airy.
