Preparation
- Bring steaks to room temperature: Start by taking your steaks out of the refrigerator about 30 minutes before cooking.
- Pat dry with a paper towel: This helps to achieve a beautifully seared crust.
- Season with salt and pepper: Liberally season both sides of each steak.
- Brush 1 tablespoon of olive oil on the steaks: Ensure both sides are coated to encourage a lovely sear.
- Heat the sauté pan: Preheat a Made In sauté pan over medium heat for about 2 minutes before placing the steaks in.
Cooking
- Sear the steak: Add the steaks to the heated pan. Sear each side for 3-4 minutes until a beautiful golden-brown crust forms.
- Check doneness: Flip the steaks and continue cooking for another 3-4 minutes, or until they reach an internal temperature of 130-140 degrees for medium rare. Remove from the pan and set aside.
- Cook the garlic: In the same pan, add the remaining tablespoon of olive oil and minced garlic. Cook for 1-2 minutes, stirring frequently to prevent burning.
- Add mushrooms and butter: Incorporate the sliced baby bella mushrooms and butter. Sauté for about 3-4 minutes until the mushrooms brown nicely.
- Deglaze the pan: Pour in the chicken broth, using a rubber spatula to scrape the brown bits from the bottom of the pan.
- Add spices: Stir in the red pepper flakes and dried thyme. Bring this mixture to a boil, then reduce the heat and allow it to simmer for 8-10 minutes.
- Incorporate cream and cheese: Stir in the heavy cream and garlic salt, letting it simmer for 1-2 minutes. Gradually add the parmesan cheese, stirring until melted and combined.
- Return steaks to the pan: Place your seared steaks back into the sauce and cook until they reach your desired level of doneness.
- Garnish and serve: Remove from heat, spoon the sauce over the steaks, sprinkle with chopped basil, and enjoy!
Notes
For an even tastier sauce, add a splash of Worcestershire sauce during the cooking process. Additionally, consider allowing your steaks to rest for a few minutes after cooking; this helps retain their juices when cut. If you prefer, you can also use different mushrooms, like cremini or shiitake.
