Ingredients

Dry Ingredients
  • 2 cups all-purpose flour The backbone of our biscuits, adding structure and lightness.
  • 1 tablespoon baking powder This key leavening agent ensures our biscuits rise impressively, creating a fluffy texture.
  • 1 teaspoon kosher salt Enhances flavors and balances the richness.
  • 1 teaspoon granulated sugar A touch of sweetness that perfectly complements the savory elements.
  • 1/4 teaspoon baking soda Works alongside the baking powder for extra lift.
Wet Ingredients
  • 1 cup sour cream The star ingredient, adding rich creaminess and tang that elevates the biscuit flavor.
  • 8 tablespoons unsalted butter Cold and cubed, this vital component provides buttery richness and flakiness.
  • 1-2 tablespoons milk Added if necessary to achieve the desired dough consistency.

Method

Preparation
  1. Prepare Your Baking Sheet: Line a large sheet pan with parchment paper or foil.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together flour, baking powder, sugar, baking soda, and salt until well combined.
  3. Incorporate Butter: Toss in cold butter cubes and rub them into the dry ingredients until the mixture resembles crumbly, pea-sized bits.
  4. Add Sour Cream: Make a well in the center and add cold sour cream. Gently combine it with dry ingredients until a loose dough forms.
  5. Adjust Dough Consistency: Stir in milk to bring the dough together if it feels too dry.
  6. Form the Dough: Dump the shaggy dough onto a lightly floured surface and shape it into a rough square.
  7. Cut and Stack: Cut the dough into four smaller squares, stack them, and press down gently. Repeat the cutting and stacking process two more times.
  8. Shape and Cut: Pat the dough into a rectangle at least ½ inch thick and cut out biscuits using a biscuit cutter.
  9. Chill the Biscuits: Place cut biscuits on a prepared sheet pan and freeze for 10-15 minutes.
  10. Prepare for Baking: Preheat oven to 425°F (220°C) and brush the tops with an egg wash.
  11. Bake and Enjoy: Bake for 18 to 20 minutes until golden brown.

Notes

Always use cold ingredients for flakiness; consider adding herbs or cheese for extra flavor.
