  • 8 pieces small-to-medium red potatoes Holds shape well and provides creaminess.
  • 4 to 5 large carrots, cut into 1-inch chunks Adds sweetness and color.
  • ½ head green cabbage, core removed, cut into 6 wedges Becomes tender and sweet.

Method

Preparation
  1. Remove the corned beef brisket from its packaging, discarding the liquid, and take out the seasoning packet.
  2. Place the brisket in a large (6 qt.) slow cooker with the fat side facing up.
  3. Sprinkle the seasoning packet generously over the meat.
Cooking
  1. Pour the reduced sodium beef broth around the brisket until it reaches about the level of the top of the meat. Cover and cook on high for 3 hours.
  2. After 3 hours, uncover the slow cooker and carefully arrange the red potatoes and carrot chunks around the brisket. Replace the cover and cook for an additional 2 hours on high.
  3. Finally, remove the cover and place the cabbage wedges on top of the brisket. Cover again and cook for an additional hour.
  4. Once cooking is complete, carefully remove the vegetables and keep warm.
  5. Gently take out the brisket and slice it against the grain. Serve it alongside the potatoes, carrots, and cabbage.
