  • 1 tbsp granulated sugar For a touch of sweetness that balances the flavors
  • 2½ tsp quick rise instant yeast A key ingredient that brings life to your dough
  • 4 cups all-purpose flour (plus more for dusting) The foundation of the buns, providing structure
  • 2 tsp fine sea salt Enhancing the overall flavor profile
  • 2 tbsp melted and cooled butter For richness and a hint of decadence
Boiling Ingredients
  • 8 cups water Necessary for the boiling process that gives that iconic pretzel crust
  • ½ cup baking soda To create that delightful browning effect
Egg Wash Ingredients
  • 1 each egg yolk For egg wash, providing a glossy finish
  • 1 tbsp water To thin out the egg yolk to the perfect consistency
  • 1 tbsp coarse sea salt The finishing touch that provides a savory crunch

Method

Preparation
  1. In a mixing bowl, combine the warm water, sugar, and instant yeast. Allow this mixture to sit for about 10 minutes until it becomes frothy.
  2. In the bowl of a stand mixer, mix all-purpose flour and fine sea salt on low speed to combine.
  3. Pour melted butter and foamy yeast mixture into the bowl while the mixer is running on low.
  4. Increase the mixer speed to medium-high and knead the dough. Add extra flour if necessary until the dough achieves a smooth, tacky consistency.
  5. Weigh the dough for accuracy and divide the total weight by 8 to determine each bun's weight.
  6. Roll each piece into a ball and pinch together at the bottom.
  7. Place the balls on a tray, cover with plastic wrap, and let rest for 15-20 minutes.
Shaping
  1. Flatten a ball into a 5-inch disk and roll it into a 7-inch log.
  2. Position the rolled buns seam side down on a lined baking tray and cover with plastic wrap.
  3. Let them rise for another 15-20 minutes.
Boiling and Baking
  1. Preheat the oven to 450°F and prepare a baking tray with parchment paper.
  2. Bring 8 cups of water to a boil, adding baking soda gradually.
  3. Place 2-3 buns into the simmering water, blanch for 20 seconds, then flip and blanch for another 20 seconds.
  4. Remove the buns, place them on the prepared tray, and brush with egg wash. Sprinkle with coarse sea salt.
  5. Make 3 diagonal cuts on each bun and bake for 10-12 minutes until golden brown.
  6. Transfer to a cooling rack for 10-15 minutes before using.

Notes

Ensure that the water temperature is correct for yeast activation and do not overcrowd the buns while simmering. Consider adding toppings like poppy seeds for flavor.
