Ingredients

Main Ingredients
  • 3 lbs beef short ribs Look for meaty ribs with the membrane scored or removed.
  • 2-4 tablespoons olive oil For moisture and spice adherence.
  • 1 tablespoon garlic powder Adds savory richness.
  • 1 tablespoon onion powder Balances out the flavors.
  • 1 tablespoon Cajun seasoning For a little kick.
  • 2 tablespoons dark brown sugar For sweetness and caramelization.
  • 1 teaspoon chili powder Adds heat.
  • 1 teaspoon salt Use smoked salt for added flavor.
  • 1 teaspoon paprika Adds color and gentle flavor.
  • 2 teaspoons oregano Herbaceous note.
  • Favorite BBQ Sauce A couple of tablespoons for finishing.
  • liquid smoke Optional for smoky flavor.

Method

Preparation
  1. Rinse the ribs thoroughly under cold water and dry them completely with paper towels.
  2. If using liquid smoke, douse the dry ribs with it and rub it into the meat.
  3. Lightly coat the ribs with olive oil.
  4. In a bowl, mix together the garlic powder, onion powder, Cajun seasoning, dark brown sugar, chili powder, salt, paprika, and oregano.
  5. Generously sprinkle the seasoning mix over the ribs on both sides.
  6. Massage the spice mixture into the meat. Add more olive oil if needed.
  7. For best results, place the seasoned ribs in a large ziplock bag or a covered bowl and marinate in the fridge for 1-2 hours.
Cooking
  1. Preheat your oven to 250°F.
  2. Line a baking sheet with aluminum foil and arrange the ribs in a single layer.
  3. Cover the ribs with another piece of foil to create a pouch.
  4. Bake for about 3½ to 4 hours. Check ribs after 3½ hours.
  5. Once finished, drain off any excess fat and brush with BBQ sauce.
  6. Broil the ribs on low, uncovered, until the sauce is sticky.
  7. Let the ribs rest for a few minutes before serving.

Notes

For added flavor, experiment with different BBQ sauces or opt for smoked salt for a stronger flavor. Marinating longer enhances the flavor further.
