Ingredients
Method
Preparation
- Chop the onion into chunky pieces, peel the garlic cloves, and add them to a blender. Pour in the chicken stock, lemon juice, 1 tablespoon of olive oil, and season with salt and pepper. Blend this mixture until smooth and aromatic.
- Cut the chicken breasts into 1-inch chunks and combine them with the marinade in a large bowl or Ziploc bag. Refrigerate for at least 2 hours for maximum flavor.
Roasting
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine 1 tablespoon of olive oil with paprika, salt, ¼ teaspoon of black pepper, and garlic powder. Coat the diced sweet potatoes with this seasoning mixture.
- Spread the seasoned sweet potatoes on a baking sheet and bake for 35 minutes. After 10 minutes, add the broccoli drizzled with 1 tablespoon of olive oil and a pinch of black pepper. Bake for an additional 25 minutes.
Cooking Chicken
- While the vegetables are roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the marinated chicken and cook for 13-15 minutes, stirring frequently until golden brown and fully cooked.
Finishing Touches
- Chop the cherry tomatoes and dill. Combine them for a refreshing side.
- Once everything is cooked, divide the lemon chicken, sweet potatoes, and broccoli into three food containers evenly.
Notes
Allowing the chicken to marinate longer (up to overnight) will intensify the flavors. You can double the recipe to meal prep for the entire week. Feel free to swap in other seasonal vegetables like bell peppers or zucchini.
