Ingredients

Main Ingredients
  • 4 cups Greek yogurt Opt for full-fat for a creamier texture or light for a healthier option.
  • 2 teaspoons fine sea salt Start with 1 teaspoon, then adjust to taste.
  • Cheesecloth or kitchen towel For straining the yogurt.
  • Strainer and bowl Essential for the draining process.
Topping Ingredients
  • 4 tablespoons toasted sesame seeds Adds a nutty flavor and crunch.
  • 4 tablespoons dried oregano (or thyme, or a mix of both) To enhance the aroma.
  • 2 tablespoons toasted pine nuts For added texture.
  • 1 tablespoon black sesame seeds A striking visual and flavor element.
  • 1/2 teaspoon sea salt flakes For seasoning.
  • a few tablespoons extra virgin olive oil To drizzle on top for richness.

Method

Make the Labneh Cheese
  1. Prepare Your Setup: Begin by placing a colander over a large bowl and lining it with a kitchen towel. This will catch the whey that drains from the yogurt.
  2. Mix the Yogurt: In a separate bowl, mix the Greek yogurt with 1 teaspoon of fine sea salt. Taste the mixture and adjust the salt level according to your preference.
  3. Transfer the Yogurt: Pour the yogurt mixture into the lined colander. Fold the kitchen towel over the yogurt to cover it.
  4. Refrigerate: Place a plate on top to help press out the whey and refrigerate for 24 hours. For thicker labneh, leave it for up to 48 hours.
  5. Store the Labneh: Transfer the labneh cheese to an airtight container after draining and keep it refrigerated until ready to use.
Make the Topping
  1. Prepare the Topping: Optionally, briefly grind the toasted sesame seeds for a finer texture. In a bowl, mix the toasted sesame seeds, dried oregano, toasted pine nuts, and black sesame seeds.
  2. Combine and Mix: Stir the mixture to integrate all flavors.
  3. Add the Finishing Touches: Take a portion of labneh and place it onto a plate or serving bowl; sprinkle your topping mix over it and drizzle with olive oil.
  4. Serve: Enjoy with warm baked pita bread for a delicious snack or appetizer.

Notes

For creamier labneh, use full-fat yogurt and cover it tightly while draining. Experiment with additional toppings like fresh herbs or spices for different flavor profiles.
