Method
Make the Labneh Cheese
- Prepare Your Setup: Begin by placing a colander over a large bowl and lining it with a kitchen towel. This will catch the whey that drains from the yogurt.
- Mix the Yogurt: In a separate bowl, mix the Greek yogurt with 1 teaspoon of fine sea salt. Taste the mixture and adjust the salt level according to your preference.
- Transfer the Yogurt: Pour the yogurt mixture into the lined colander. Fold the kitchen towel over the yogurt to cover it.
- Refrigerate: Place a plate on top to help press out the whey and refrigerate for 24 hours. For thicker labneh, leave it for up to 48 hours.
- Store the Labneh: Transfer the labneh cheese to an airtight container after draining and keep it refrigerated until ready to use.
Make the Topping
- Prepare the Topping: Optionally, briefly grind the toasted sesame seeds for a finer texture. In a bowl, mix the toasted sesame seeds, dried oregano, toasted pine nuts, and black sesame seeds.
- Combine and Mix: Stir the mixture to integrate all flavors.
- Add the Finishing Touches: Take a portion of labneh and place it onto a plate or serving bowl; sprinkle your topping mix over it and drizzle with olive oil.
- Serve: Enjoy with warm baked pita bread for a delicious snack or appetizer.
Notes
For creamier labneh, use full-fat yogurt and cover it tightly while draining. Experiment with additional toppings like fresh herbs or spices for different flavor profiles.
