Method

Cooking Brown Rice
  1. Add uncooked brown rice to the Instant Pot. Pour in the water, stir to combine, seal the lid, and select the RICE option on high pressure.
  2. Alternatively, simmer a deep pot of water over medium heat with the brown rice for 25-30 minutes or until fully absorbed.
Preparing Shrimp
  1. In a mixing bowl, combine raw honey, low sodium soy sauce, minced garlic, minced ginger, crushed red pepper flakes, and rice vinegar. Whisk until combined.
  2. Heat 1/2 tsp olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink on both sides, about 2-3 minutes.
  3. Pour in the prepared sauce and cook until the shrimp is fully cooked, about another 2-3 minutes. Set aside to cool.
Cooking Snap Peas
  1. In another skillet, heat 1 tbsp olive oil over medium-high heat. Add sugar snap peas and toss to coat.
  2. Cook for about 2 minutes, stirring frequently. Add lemon zest, sea salt, and ground black pepper, cooking for an additional 3-5 minutes until crisp yet tender.
Meal Assembly
  1. Divide the cooked brown rice into 4 equal portions in meal prep containers.
  2. Add sautéed lemon snap peas to the opposite side and top the rice with honey garlic shrimp, drizzling any remaining sauce over.
  3. Seal the lids tightly; your meal prep shrimp is good to go in the fridge for up to 4 days.

Notes

Choose sustainably sourced shrimp. Adjust spice levels as needed. Substitute brown rice with quinoa or cauliflower rice for a low-carb option. Feel free to add more veggies like broccoli or bell peppers.
