Method
Cooking Brown Rice
- Add uncooked brown rice to the Instant Pot. Pour in the water, stir to combine, seal the lid, and select the RICE option on high pressure.
- Alternatively, simmer a deep pot of water over medium heat with the brown rice for 25-30 minutes or until fully absorbed.
Preparing Shrimp
- In a mixing bowl, combine raw honey, low sodium soy sauce, minced garlic, minced ginger, crushed red pepper flakes, and rice vinegar. Whisk until combined.
- Heat 1/2 tsp olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink on both sides, about 2-3 minutes.
- Pour in the prepared sauce and cook until the shrimp is fully cooked, about another 2-3 minutes. Set aside to cool.
Cooking Snap Peas
- In another skillet, heat 1 tbsp olive oil over medium-high heat. Add sugar snap peas and toss to coat.
- Cook for about 2 minutes, stirring frequently. Add lemon zest, sea salt, and ground black pepper, cooking for an additional 3-5 minutes until crisp yet tender.
Meal Assembly
- Divide the cooked brown rice into 4 equal portions in meal prep containers.
- Add sautéed lemon snap peas to the opposite side and top the rice with honey garlic shrimp, drizzling any remaining sauce over.
- Seal the lids tightly; your meal prep shrimp is good to go in the fridge for up to 4 days.
Notes
Choose sustainably sourced shrimp. Adjust spice levels as needed. Substitute brown rice with quinoa or cauliflower rice for a low-carb option. Feel free to add more veggies like broccoli or bell peppers.
