Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the chili powder, cumin, garlic powder, and kosher salt.
Cooking
  1. Add 1/2 tablespoon of olive oil to a large oven-safe skillet over medium-high heat.
  2. Once hot, add the ground beef, crumbling it with a spatula. Season with half of the spice blend. Cook for 5-7 minutes until browned.
  3. Transfer the cooked beef to a plate and set aside.
  4. In the same skillet, add the remaining olive oil. Reduce heat to medium and add potatoes, onion, and poblano pepper. Cook for 10-12 minutes, stirring frequently.
  5. Stir in the remaining spice blend, the chopped cilantro, and diced green chiles.
  6. Return the cooked ground beef to the skillet, pour over the enchilada sauce, and mix well.
  7. Sprinkle cheese generously on top. Cover with foil.
  8. Bake for 15 minutes, then remove the foil and broil for an additional 3-5 minutes until cheese is bubbly and browned.
  9. Garnish with more cilantro and serve hot.

Notes

For extra texture, consider adding breadcrumbs to the cheese topping. Feel free to add jalapeños or swap green chiles for a spicier version. Experiment with different cheeses for a unique twist. Let sit for a few minutes after baking for easier serving.
