Method

Preparation
  1. In a food processor, add the green onions, garlic, water, jalapeno, lime juice, brown sugar, olive oil, allspice, thyme, cinnamon, kosher salt, and pepper. Pulse until combined and smooth.
  2. Place the American lamb loin chops into a Ziploc bag and pour the marinade over the lamb. Ensure the chops are well-coated. Seal the bag and refrigerate for at least 30 minutes, or overnight for best results.
  3. While the lamb is marinating, combine all peach salsa ingredients in a bowl. Stir gently to combine all the flavors.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Remove the lamb from the fridge and place it on a baking sheet. Grill the lamb for about 5 minutes on each side or until an internal temperature of 145°F is reached.
  3. After grilling, allow the lamb to rest for three minutes before slicing.
Serving
  1. Slice the lamb loin chops and arrange them on a plate. Generously spoon the peach salsa over the top. Serve immediately.

Notes

For an extra layer of flavor, try adding a touch of ginger to your marinade. Feel free to swap in your preferred fruits for the salsa, such as mango or pineapple.
