Ingredients

Marinade
  • ½ cup extra-virgin olive oil Creamy texture that enhances flavor
  • 2 tablespoons fresh chopped rosemary Adds aromatic freshness
  • 4 cloves garlic, roughly chopped Provides sharp flavor
  • 2 teaspoons kosher salt For seasoning
  • ¼ teaspoon freshly ground black pepper For added spice
Main Ingredient
  • 2 to 2½ lbs flank steak Base of the recipe, should be tenderized

Method

Preparation
  1. In a blender, combine the olive oil, chopped rosemary, roughly chopped garlic, kosher salt, and black pepper. Blitz everything together for a few minutes until the garlic and rosemary are finely pulverized.
  2. Place the flank steak in a medium-sized baking dish. Using a fork, poke the meat about ten times on each side.
  3. Pour the freshly made marinade over the steak and turn it a few times to coat evenly. Cover the dish with saran wrap and refrigerate for at least one hour; overnight is recommended.
Grilling
  1. Grease your grill grates with oil and preheat the grill to high heat.
  2. Place the marinated flank steak on the grill. Cover and cook for about 5 minutes before flipping it over.
  3. Grill the second side for 3 to 4 minutes while covered. Adjust timing based on preferred doneness.
Serving
  1. Let the meat rest on a cutting board, covered loosely with aluminum foil, for about 15 minutes.
  2. Slice the flank steak very thinly against the grain to ensure tenderness.

Notes

For extra flavor, consider adding a splash of fresh lemon juice to the marinade. Letting your steak rest after cooking keeps it juicy. Experiment with additional herbs like thyme or basil for variations. Store leftovers in an airtight container for up to three days.
