Method
Preparation
- Boil the green beans for about 3 minutes until just tender. Drain and run under cold water, then pat dry.
- Toss the sliced onions with flour, panko breadcrumbs, salt, and pepper until well coated.
Frying the Onions
- Heat about 2cm of oil over medium-high heat. Fry the onions in small batches for about 1.5 minutes or until lightly golden. Drain on paper towels.
Cooking the Mushrooms
- Melt the butter over medium-high heat and add the chopped mushrooms. Cook for about 1 minute, then add salt, pepper, and minced garlic. Cook until the garlic is golden.
Making the Mushroom Sauce
- Stir in the flour, then gradually pour in half the broth while stirring. Once smooth, add remaining broth and cream, then stir in the nutmeg. Cook until thickened, about 5 minutes.
Combining and Baking
- Preheat the oven to 350°F/180°C. Combine the green beans and mushroom sauce in the pot. Transfer to a casserole dish, top with fried onions, and bake for 15 minutes.
Serving
- Serve hot and enjoy!
Notes
For extra crunch, mix grated cheese with the panko breadcrumbs before frying. You can also prepare the sauce and onions a day ahead. Serve with meats or sides like mashed potatoes.
