Preparation
- Preheat your oven to 375 degrees Fahrenheit.
- In a large bowl, combine crushed graham cracker crumbs and 1/4 cup of sugar. Mix well.
- Drizzle in the melted butter and stir until evenly moistened. Press the mixture into the bottom of a 9-inch pie plate.
- Bake the crust for approximately 7 minutes or until light brown. Allow to cool completely.
Making the Filling
- In a separate bowl, whip the heavy whipping cream until light and fluffy.
- In another bowl, beat together the cream cheese, 3/4 cup of granulated sugar, and lemon zest until smooth.
- Puree the diced strawberries in a blender, leaving some chunks for texture.
- Add the pureed strawberries and vanilla extract to the cream cheese mixture and mix well.
- Fold in the whipped cream until well combined.
Assembly and Freezing
- Pour the strawberry cheesecake mixture into the cooled crust and spread evenly.
- Cover with plastic wrap and place in the freezer for at least 4 hours or until fully frozen.
Serving
- Slice the cheesecake with a warmed knife for clean cuts.
- Top with whipped cream and garnish with strawberries if desired.
Notes
For a richer flavor, add a pinch of salt to crust and filling. Use store-bought whipped cream or graham cracker crust to save time. If strawberries aren't in season, substitute with frozen strawberries after thawing.
