Ingredients

For the Wings
  • 3 pounds Chicken Wing Pieces Use fresh wings for the best flavor and texture.
  • 3.5 cups All-Purpose Flour This creates a light and crispy coating.
  • 1.5 teaspoons Salt Enhances the overall flavor of the wings.
  • 2 teaspoons Black Pepper Adds a mild heat and depth.
  • 3 teaspoons Garlic Powder Imparts a savory aroma and richness.
  • 3 teaspoons Smoked Paprika Brings a subtle smokiness to the mix.
  • 1.5 cups High Heat Cooking Oil Vital for frying, ensuring a perfect crunch without burning.
For the Sauce
  • 1 cup Franks Hot Sauce Delivers that classic spicy kick.
  • 0.5 cup Cholula Hot Sauce Adds complexity and flavor depth.
  • 0.25 cup Butter Provides richness and a silky texture to the sauce.

Method

Preparation
  1. Mix all the dry ingredients—flour, salt, black pepper, garlic powder, and smoked paprika—in a large bowl or plastic bag.
  2. Add the chicken wing pieces and toss them in the mixture until completely coated.
  3. For best results, refrigerate the wings for 30 minutes to allow the coating to adhere better during frying.
Making the Sauce
  1. In a small saucepan, combine the Franks hot sauce, Cholula hot sauce, and butter.
  2. Heat over low heat, stirring until the butter melts and the sauces meld together.
  3. Once combined, remove from heat and set aside.
Frying the Wings
  1. In a large frying pan, heat the high-heat cooking oil over medium heat, ensuring enough oil to partially submerge the wings.
  2. Carefully add about half of the wings to the pan and fry for about 7-8 minutes until beautifully browned.
  3. Flip the wings halfway through to cook evenly to a magnificent golden-brown color.
Tossing in Sauce
  1. Transfer the cooked wings to a large bowl and immediately toss them in the prepared hot sauce until evenly coated.
  2. Serve the wings hot, or keep them warm in a 200-degree oven on a cookie sheet.
Serving
  1. Serve with a side of blue cheese or ranch dressing to balance the heat.

Notes

For extra crispy wings, double-fry them. Marinate the wings in the spice mixture overnight for a deeper flavor. Experiment with different sauces by adding honey or different spices to the base recipe.
