  • 1 onion, diced Lends depth and aromatic qualities to the filling.
  • 1 clove garlic, minced Elevates the dish with fragrance.
  • 1 cup shredded mozzarella cheese Melts beautifully for a creamy layer.
  • 2 tbsp shredded Parmesan cheese Adds a nutty, slightly salty kick.
  • 1 red bell pepper, diced Adds color and sweetness.
Sauces and Seasonings
  • 1 ½ cups pasta sauce (or marinara, divided) Infuses all components with flavor.
  • 2 tsp olive oil Brings rich, aromatic flavor.
  • 2 tsp Italian seasoning Perfectly complements the ingredients.
  • ¼ tsp black pepper Enhances the overall flavor profile.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, combine the ground beef, diced onion, and minced garlic. Cook over medium heat until the beef is browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in the diced red bell pepper and any leftover zucchini bits if using. Sauté for an additional 2-3 minutes.
  4. Add 1 cup of pasta sauce, Italian seasoning, and black pepper. Let simmer for about 10 minutes.
  5. Slice each zucchini lengthwise, then scoop out the center to create a ½-inch thick shell. Brush with olive oil and season lightly with salt and pepper.
  6. Arrange the zucchini halves in a large baking dish and fill with the beef mixture. Top with the remaining ½ cup of pasta sauce.
  7. Bake for 15 minutes.
  8. Top with mozzarella and Parmesan cheese. Bake for an additional 10-15 minutes until cheese is melted and bubbly.

Notes

Make it vegetarian by replacing ground beef with lentils or quinoa. Customize with additional veggies or cheeses. Prepare the filling ahead for easier assembly.
