  • 1/2 cup plain Greek yogurt, for finishing Adds tanginess.
  • 1/2 cup water For sauce consistency.

Method

Preparation
  1. Marinate the Chicken: Place the chicken pieces in a bowl or zip-top bag. In another bowl, combine all marinade ingredients and pour over chicken, ensuring it's well coated. Let marinate for at least 30 minutes, up to 8 hours for better flavor.
Cooking
  1. Heat oil in a large skillet over medium-high heat. Add diced onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Add the marinated chicken and all the marinade, then sprinkle brown sugar over the top. Cook for 2-3 minutes.
  3. Pour in Greek yogurt and water, reduce heat to medium or medium-low. Cook for 8-10 minutes, stirring occasionally, until chicken is cooked through and sauce thickens.
  4. Before serving, taste and adjust seasoning as necessary.
  5. Serve hot with extra sauce.

Notes

Store leftover chicken in an airtight container in the refrigerator for up to 3 days. You can freeze portions for about 3 months. Reheat gently in a pan over low heat, adding a splash of water if needed. For variations, add vegetables or substitute chicken with paneer or tofu.
