Preparation
- Slice the tomatoes and arrange them on plates. Sprinkle lightly with salt and let them sit for at least 10-20 minutes, allowing the salt to draw out their juices.
- In a small skillet, melt the butter over medium-high heat. Add the chopped onion and minced garlic, sautéing until the onions are soft and translucent, about 8 minutes. Transfer this aromatic mixture to a medium-sized bowl.
- In the bowl with the sautéed onions and garlic, add in the mozzarella cheese, beaten eggs, fresh herbs, and black pepper. Stir until everything is well combined.
- Drain excess water from the plates of seasoned tomatoes. Gently blot the tomatoes with a paper towel to soak up any additional moisture.
Assembly
- Grease a pie pan and arrange the tomatoes in a single layer at the bottom. Spoon about 1/4 cup of the cheese mixture over the layer of tomatoes. Repeat the layering process until all ingredients are used, finishing with a final layer of tomatoes.
- Top the last layer of tomatoes with a sprinkle of extra mozzarella cheese.
Baking
- Preheat your oven to 375 degrees Fahrenheit and bake the pie for 30-40 minutes, or until the edges are lightly browned and the cheese is bubbling.
- Allow the pie to sit for 5-7 minutes before slicing.
Notes
Choose ripe, in-season tomatoes for the best flavor. Feel free to experiment with different cheese types such as feta or goat cheese for a tangy twist. Consider adding cooked and crumbled sausage or a sprinkle of bacon for added depth.
