  • 1 tsp thyme Earthy notes that pair perfectly with chicken.
  • 1/2 tsp oregano Adds a burst of flavor that complements the dish.
  • 1 cup quinoa The star of the show, providing a healthy, nutty base.
  • 1.5 cups chicken broth Infuses the dish with moisture and flavor.

Method

Cooking
  1. In a large skillet with a lid, heat the olive oil over medium-high heat until shimmering.
  2. Add the chopped onion and sauté for about 2-3 minutes until translucent and fragrant.
  3. Incorporate the cubed chicken along with salt, black pepper, garlic, thyme, and oregano. Cook until the exterior is browned.
  4. Add the frozen peas, fresh corn, and red bell pepper. Sauté together for about 2 minutes.
  5. Pour in the quinoa and chicken broth. Stir well to combine.
  6. Reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa absorbs the broth. Stir every 5-7 minutes.
  7. Optionally, sprinkle crumbled feta cheese on top before serving.
  8. Plate your mixture, serve, and enjoy!

Notes

For added texture, use a mix of bell peppers. For a spicier kick, add red pepper flakes during cooking. Substitute quinoa with brown rice or couscous for variations. Add chickpeas or black beans for extra protein.
