Cooking Preparation
- Cook the rice using a rice cooker according to the instructions until fluffy, about 20 minutes.
- Spray the interior of your Crock-Pot with non-stick cooking spray.
- In the Crock-Pot, add cooked rice, sliced celery, cream of chicken soup, diced jalapeno (if using), and half the onion soup mix. Stir well.
- Place the boneless, skinless chicken breasts over the top of the rice mixture.
- Sprinkle the remaining onion soup mix over the chicken.
- Cover and cook on low for 5 to 6 hours or until chicken reaches an internal temperature of 165°F.
- Optionally, garnish with freshly chopped parsley before serving.
Alternative Preparation
- In a large bowl, mix uncooked rice with other ingredients (excluding chicken) and stir to combine.
- Pour in 3 cups of chicken stock.
- Cover and cook on high for 3 to 4 hours.
- If using cooked rotisserie chicken, sauté diced jalapeno and celery in oil until softened, mix with rice mixture and one can of cream of chicken soup, and transfer to a 13x9 inch casserole dish.
- Bake at 350°F for 15 minutes if chicken is cooked. If using raw chicken, lay it atop rice mixture and bake at 375°F for 20 minutes.
Notes
Consider substituting the onion soup mix with your favorite herbs for a unique twist. You can also add diced carrots, peas, or bell peppers for additional nutrients. To enhance cheese flavor, add shredded cheese on top during the last 10 minutes of cooking.
