  • 2 tablespoons all-purpose flour Thickens the gravy.
  • 2 cups beef broth Forms the base of the gravy.
  • to taste kosher salt and black pepper Final seasoning for taste.

Method

Preparation
  1. In a large bowl, combine the grated onion (and its juices), breadcrumbs, egg, kosher salt, and black pepper until well blended.
  2. Add the lean ground beef to the bowl. Using your hands, mix everything until evenly combined.
  3. Divide the mixture into four equal parts. Form each section into an oval patty about 3/4 inch thick.
Cooking
  1. Heat a large skillet over high heat for about 2 minutes until searing hot. Add the olive oil and swirl to coat the pan.
  2. Place the patties in the hot pan without moving them for 2 minutes on each side, allowing a beautiful brown crust to develop.
  3. Once done, transfer them to a plate.
  4. In the same skillet, add the butter. Once melted, add the sliced mushrooms and cook for about 2 minutes until golden brown.
  5. Sprinkle the flour over the cooked mushrooms, stirring to coat them evenly and cook for an additional minute.
  6. Gradually pour in the beef broth while stirring constantly. Let the mixture come to a simmer.
  7. Return the steak patties to the skillet. Simmer uncovered for about 5 minutes to thicken the gravy and finish cooking the patties.

Notes

Be gentle while mixing to keep patties light and tender. Properly searing adds flavor and color. Consider adding fresh herbs like thyme or parsley for an enhanced flavor.
