Method

Preparation
  1. Preheat your oven to 180C (or 160C fan) and line a 3lb (9×5) loaf tin with non-stick baking paper.
  2. In a large mixing bowl, whisk together both sugars and the melted butter (or oil) until well combined.
  3. Whisk in the eggs and vanilla extract until just combined, ensuring not to over-mix.
  4. Sift in the flour, bicarbonate of soda, and salt, gently folding these dry ingredients in to avoid density.
  5. Carefully fold in the mashed bananas until the batter is just combined.
  6. In a small bowl, mix together the dark brown sugar, granulated sugar, and cinnamon for the swirl.
Assembly
  1. Pour about 1/4 of the batter into the prepared loaf tin and spread it evenly.
  2. Dollop on 1/4 of the cinnamon swirl mixture and swirl it through with a knife.
  3. Repeat the layering process with the remaining batter and cinnamon swirl until finished with cinnamon swirl on top.
Baking
  1. Bake in the preheated oven for 50-65 minutes, or until a toothpick comes out clean.
  2. Leave to cool in the tin for about 1 hour before transferring to a cooling rack.
  3. Enjoy it slightly warm for the best flavor.

Notes

For extra moist banana bread, use very ripe bananas. Feel free to add nuts or chocolate chips. Do not over-mix the batter.
