Preparation
- Preheat your oven to 180C (or 160C fan) and line a 3lb (9×5) loaf tin with non-stick baking paper.
- In a large mixing bowl, whisk together both sugars and the melted butter (or oil) until well combined.
- Whisk in the eggs and vanilla extract until just combined, ensuring not to over-mix.
- Sift in the flour, bicarbonate of soda, and salt, gently folding these dry ingredients in to avoid density.
- Carefully fold in the mashed bananas until the batter is just combined.
- In a small bowl, mix together the dark brown sugar, granulated sugar, and cinnamon for the swirl.
Assembly
- Pour about 1/4 of the batter into the prepared loaf tin and spread it evenly.
- Dollop on 1/4 of the cinnamon swirl mixture and swirl it through with a knife.
- Repeat the layering process with the remaining batter and cinnamon swirl until finished with cinnamon swirl on top.
Baking
- Bake in the preheated oven for 50-65 minutes, or until a toothpick comes out clean.
- Leave to cool in the tin for about 1 hour before transferring to a cooling rack.
- Enjoy it slightly warm for the best flavor.
Notes
For extra moist banana bread, use very ripe bananas. Feel free to add nuts or chocolate chips. Do not over-mix the batter.
