Method
Preparation
- Preheat the oven to 350°F (180°C).
- Grease an 8x11 inch (20x27cm) rectangular pan or a 9-inch round cake pan with a removable bottom.
- In a mixing bowl, combine the ground chocolate wafers with the melted butter until it resembles wet sand.
- Firmly press the mixture into the bottom of the prepared pan. Bake for 10 minutes and cool on a wire rack.
Filling
- Blend the cream cheese until smooth. Gradually add the sugar until combined.
- Beat in the eggs two at a time, mixing gently.
- Stir in the vanilla extract, sour cream, and heavy cream until just blended.
- Pour the mixture into the cooled crust and smooth the top.
Baking
- Bake at 325°F (165°C) for 10 minutes, then reduce temperature to 275°F (140°C) and bake for an additional 35-40 minutes.
- Turn off the oven, leaving the cheesecake inside for another hour to cool gradually.
- Run a knife around the edges to loosen and cool to room temperature, then refrigerate for at least 8 hours.
Berry Topping
- Combine mixed berries, brown sugar, and lemon juice in a saucepan. Cook until syrupy, about 5 minutes.
- Stir in raspberry jam until well mixed.
Serving
- Lift the cheesecake from the pan, spread the berry topping over the surface, slice, and serve.
Notes
Ensure all ingredients are at room temperature for a smoother mix. Avoid over-mixing after adding eggs. Letting the cheesecake cool in the oven prevents cracking.
