  • 6 pieces boneless skinless chicken thighs or breasts (cut into bite-sized pieces) Provides protein-packed foundation.
  • 4 pieces bell peppers (sliced) Use a variety of colors for visual appeal.
  • 1 small onion (sliced) Enhances flavor with sweetness when sautéed.
  • 1 packet fajita seasoning mix Infuses the dish with Mexican spices.
  • 1 cup sour cream Adds a creamy, tangy contrast.
  • 4 ounces cream cheese (softened) Introduces indulgent creaminess.
  • 2 cups cheddar cheese (grated) Forms a gooey layer on top.
Optional Toppings
  • avocado, guacamole, sour cream, and salsa These add freshness and brightness.

Method

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a skillet over medium heat, pour in the tablespoon of olive oil. Once the oil is hot, add the bite-sized pieces of chicken. Sauté until cooked through and golden brown, then set aside.
  3. In the same skillet, toss in the sliced onions and bell peppers. Sauté until tender.
  4. Return the cooked chicken to the skillet with the veggies. Sprinkle in the fajita seasoning, then add the sour cream and softened cream cheese. Stir until well combined.
  5. Transfer the mixture into a greased casserole dish. Evenly sprinkle the grated cheddar cheese over the top. Bake for about 10 to 15 minutes or until the cheese is melted and bubbly.

Notes

Consider marinating the chicken in the fajita seasoning, sour cream, and lime juice for extra flavor. Add other vegetables like zucchini or corn for more texture.
