Filling
  • 2 tbsp olive oil (divided) Enhances the flavors while providing a rich background.
  • 1 lb shaved steak Tender and juicy, offering savory depth.
  • 1 small onion (thinly sliced) Adds subtle sweetness.
  • 1/2 medium red pepper (thinly sliced) Infuses a burst of color and sweetness.
  • 6 oz mushrooms (chopped) Contributes to the heartiness of the filling.
  • 1 tbsp Worcestershire sauce Ties all flavors together.
  • 1/2 tsp kosher salt Essential for enhancing flavors.
  • 1 tsp black pepper Introduces a slight kick.
  • 8 slices provolone cheese Adds a creamy, cheesy layer.

Method

Preparation
  1. Preheat the oven to 400 degrees Fahrenheit. Grease a 9x13 baking dish.
  2. Slice each green bell pepper down the center, removing the core, seeds, and membrane. Place them upright in the prepared baking dish and bake for 15 minutes.
Cooking the Filling
  1. In a large skillet over medium-high heat, add half of the olive oil. Once hot, add the shaved steak and cook for 5-7 minutes, breaking it into small pieces. Transfer to a plate.
  2. Add the remaining olive oil to the skillet. Sauté the sliced onion and red bell pepper for about 5 minutes until softened. Then, add chopped mushrooms and cook for an additional 2 minutes.
  3. Return the cooked steak to the skillet. Add Worcestershire sauce, salt, and black pepper. Stir in 2 slices of provolone cheese until melted.
Assembly
  1. Remove the baked green peppers from the oven. Stuff each pepper with the meat and vegetable mixture, then top each with an additional slice of provolone cheese.
Baking
  1. Return the stuffed peppers to the oven and bake for 15-30 minutes, depending on desired tenderness.

Notes

For extra flavor, consider adding minced garlic to the mixture. You can substitute provolone with mozzarella or cheddar, or add other vegetables like zucchini or spinach. Garnish with freshly chopped parsley before serving.
