Method

Preparation
  1. Preheat the oven to 325°F (163°C) and grease a 9×13-inch pan.
  2. Prepare the crust: In a small bowl, combine the graham cracker crumbs, sugar, and ground cinnamon. Stir in the melted butter until everything is well combined. Press this mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes, then take it out and let it cool.
Making the Cheesecake Filling
  1. Adjust the oven temperature to 300°F (148°C).
  2. In a large mixing bowl, blend the cream cheese, sugar, and all-purpose flour on low speed until the mixture is creamy and smooth.
  3. Add the sour cream, vanilla extract, and ground cinnamon, and mix well.
  4. Incorporate the eggs one at a time, mixing slowly after each addition.
  5. Pour the batter over the cooled crust and spread it evenly.
  6. Bake for 30 minutes.
Cooling Process
  1. Once baked, turn off the oven but leave the cheesecake inside with the door closed for 20 minutes.
  2. Crack the oven door slightly for an additional 15 minutes.
  3. Let the cheesecake cool completely in the fridge for 3-4 hours.
Preparing the Topping
  1. In a skillet, add the chopped apples, brown sugar, ground cinnamon, ground nutmeg, and a sprinkle of lemon juice. Cook over medium heat until the apples are tender, about 10 minutes.
  2. Allow the spiced apples to cool slightly.
Assembly and Serving
  1. Spread the cooked apples evenly over the cooled cheesecake and drizzle generously with caramel sauce.
  2. For whipped cream, combine the heavy whipping cream, powdered sugar, vanilla extract, and ground cinnamon. Whip on high speed until stiff peaks form.
  3. Serve cheesecake slices with whipped cream on the side.

Notes

To enhance your cheesecake, use a variety of apples. Ensure all ingredients are at room temperature before mixing to avoid cracks. Follow the slow cooling process for a smooth surface.
