Preparation
- Preheat your oven to 400 degrees Fahrenheit.
- Pierce the potatoes several times with a fork and place them on a foil-lined baking sheet.
- Bake the potatoes until fork-tender, about 40-60 minutes depending on size.
- Once done, allow the potatoes to cool, then cut in half lengthwise and scoop out the fluffy inner potato 'meat', leaving the skins intact.
Filling and Baking
- In a bowl, mix the scooped potato with broccoli, chives, cheddar (except reserved 1/4 cup), butter, sour cream, salt, pepper, and garlic powder until creamy.
- Scoop the mixture back into the potato skins and top with reserved cheddar.
- Return to the oven and bake for an additional 15-20 minutes, until cheese is melty.
- Cool for 5 minutes before serving.
Notes
Microwave potatoes for quicker prep but without crispy skin. Consider adding smoked paprika or chili flakes for extra flavor. Pre-packaged steamed broccoli can save time.
