Ingredients

Lasagna Base
  • 9 pieces lasagna noodles, cooked until al dente
Protein
  • 1 pound breakfast sausage, juicy and flavorful
  • 12 large eggs, whisked to elevate fluffiness
Dairy
  • 1.5 cups milk, creamy for the perfect blend
  • 16 ounces Ricotta cheese, rich and creamy
  • 2 cups sharp cheddar cheese, shredded for that tangy punch
  • 2 cups Monterey jack cheese, shredded for gooeyness
Vegetables
  • 1 small onion, diced for sweetness
  • 1 piece green bell pepper, diced for a fresh crunch
Seasonings
  • 1 teaspoon garlic powder for aromatic undertones
  • 1 teaspoon Slap Ya Mama seasoning for a spicy kick
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon oregano for a herbal finish
  • 0.5 teaspoon basil to enhance flavor profile

Method

Preparation
  1. Preheat your oven to 375°F. Prepare a 9 x 13 baking dish by spraying it with nonstick cooking spray.
  2. Cook the lasagna noodles according to package directions until al dente. Drain and set aside.
Cooking
  1. In a large frying pan over medium heat, cook the breakfast sausage until brown and no longer pink. Transfer to a plate lined with paper towels.
  2. Using the same frying pan, add the diced onions and bell peppers. Cook until tender and onions are translucent.
  3. Combine the browned sausage with the cooked vegetables in the pan.
Assembly
  1. In a medium bowl, combine Ricotta cheese, oregano, and basil. Mix until well blended.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper until fully incorporated.
  3. Layer the lasagna: Start with ¼ cup of the egg mixture at the bottom of the baking dish. Layer on 3 lasagna noodles, followed by half of the Ricotta mixture, half of the sausage and vegetable mixture, and 1 cup of sharp and Monterey jack cheese. Add another layer of 3 noodles, the remaining Ricotta mixture, remaining sausage and vegetable mixture, 1 cup of cheese, and the remaining egg mixture. Top with 3 noodles and remaining cheese.
Baking
  1. Cover the dish with foil and bake in the preheated oven for 45-50 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and eggs are set.

Notes

For added flavor, try using spicy sausage or adding a dash of hot sauce to the egg mixture. Use fresh herbs whenever possible; they elevate the freshness of the dish. Prepare the night before for convenience. Consider whole grain noodles for a healthier twist. Rest after baking to set layers.
