Preparation
- Preheat your oven to 350°F (175°C).
- Spray a 9x12 casserole dish with cooking spray and set aside.
- In a shallow dish, mix the breadcrumbs with the cheddar and Parmesan cheeses.
- Melt the unsalted butter in a small pan over medium-low heat or microwave for about 1 minute until fully melted. Stir in onion and garlic powders.
- Season each chicken breast with salt and black pepper on both sides.
- Dip each chicken breast in the butter mixture, then press into the breadcrumb mixture until fully coated.
Baking
- Place the coated chicken breasts in the prepared casserole dish. Sprinkle any excess breadcrumbs over the chicken and press down.
- Drizzle leftover melted butter mixture over the top.
- Bake in the preheated oven for 35-45 minutes, until a thermometer reads 165°F (75°C) for fully cooked chicken.
- Remove from the oven, let cool slightly, and serve hot.
Notes
For added flavor, consider marinating the chicken in buttermilk for a few hours before the recipe. Customize the cheese blend according to your preference. Ensure chicken breasts are of similar size for even cooking. Add crushed cornflakes for extra crunch.
