Main Ingredients

  • 1 package silken tofu (about 10.5 oz / 300 grams) Adds a creamy, luscious element.
  • ½ cup dairy-free milk Ensure it’s unsweetened and unflavored.
  • 2 tablespoons nutritional yeast Gives a cheesy, umami flavor.
  • 2 tablespoons almond flour Adds nuttiness; chickpea flour can be a substitute.
Spices and Seasonings
  • ¼ teaspoon ground turmeric Imparts a vibrant yellow hue and earthy flavor.
  • 1 teaspoon Dijon mustard Gives a tangy depth of flavor.
  • 2 teaspoons cornstarch Helps to create a silky texture.
  • 1 teaspoon Kala Namak (Indian Black Salt) Gives the scramble its unique 'eggy' taste.
  • ½ teaspoon fine sea salt Adjust as necessary.
  • ½ teaspoon black pepper Adds subtle heat.
  • ½ teaspoon onion powder Enhances taste with mild sweetness.
  • ½ teaspoon garlic powder Adds an aromatic layer.
For Cooking
  • 2 tablespoons vegan butter For a buttery finish; oil-free option can be used.

Method

Preparation
  1. Crumble the firm tofu either using your fingers or a potato masher, then set aside.
  2. In a blender, combine the silken tofu, dairy-free milk, nutritional yeast, almond flour, turmeric, Dijon mustard, cornstarch, Kala Namak, sea salt, black pepper, onion powder, and garlic powder. Blend until completely smooth.
Cooking
  1. Preheat a large sauté pan over medium-low heat and add the vegan butter. Let it melt and then add the crumbled tofu.
  2. Cook the crumbled tofu for a minute or two.
  3. Pour the blended tofu mixture over the cooked crumbled tofu and stir everything together. Continue to stir for about 5 minutes until it reaches your desired texture.
  4. Adjust seasoning with salt, pepper, and additional Kala Namak to taste. Serve immediately.

Notes

Use fresh ingredients for best flavor. For added heat, consider cayenne pepper or sriracha. Store leftovers in the fridge for up to 3 days or freeze for up to a month.
