Method
Preparation
- Sauté the diced red and green bell peppers in a small frying pan with a bit of oil over medium heat until they start to soften, approximately 3 minutes.
- Remove from heat to retain the bright colors and crunch.
- In a medium bowl, combine the sautéed bell peppers with the drained tuna and cream cheese. Mix well and set aside.
- In a separate medium bowl, beat the six eggs until fully blended.
Cooking
- Heat oil in an 8-inch nonstick frying pan over medium-high heat until hot.
- Pour in half of the egg mixture and wait about 30 seconds until the eggs at the bottom start to set.
- Gently disturb the cooked egg with a spatula, allowing uncooked egg to flow into the gaps.
- When the top has a thin layer of liquid egg, spoon half of the tuna mixture onto one half of the omelette.
- Carefully lift the other edge of the egg and fold it over to create a semi-circle, sealing it with the spatula.
- Allow the omelette to cook for another minute, then flip it to cook the other side for an additional minute.
- Gently transfer the completed omelette to a plate and garnish with chives, sea salt, and pepper.
Repeat
- Follow the same steps to make a second omelette with the remaining ingredients.
- Enjoy!
Notes
For a spicier twist, consider adding diced jalapeños to the bell pepper mixture. Experiment with different cheese types—such as feta or cheddar—for varied flavor profiles. Use pre-cooked tuna for even quicker prep.
