Ingredients
Method
Preparation
- Start by adding olive oil to a frying pan and heating it to medium-high.
- Add the cut chicken thighs to the pan, cooking on both sides until golden brown, about 10 minutes.
- In a separate bowl, combine soy sauce, rice vinegar, minced ginger, minced garlic, brown sugar, honey, sesame oil, and water. Mix until the sugar is dissolved.
- Pour the teriyaki sauce mixture over the cooked chicken, stirring frequently until the sauce thickens and coats the chicken, approximately 5–6 minutes.
- Once thickened, sprinkle with sesame seeds and chopped green onion.
Rice and Broccoli Preparation
- Rinse the rice under cold water, then cook it in a medium pot with 1 cup of rice and 1.5 cups of water, bringing to a boil before covering and simmering until cooked.
- Boil water in another pot and add salt. Cut broccoli into florets and cook for 3–4 minutes until tender.
Assembling and Storing
- Fluff the rice and divide it among meal prep containers, adding portions of chicken and broccoli.
- Store in the fridge for 3-4 days, or freeze for up to 2 months.
Notes
Marinate the chicken in teriyaki sauce for an hour before cooking for deeper flavors. Feel free to swap broccoli with other vegetables like bell peppers or carrots.
