Method
Prepare the Dry Ingredients
- In a spacious mixing bowl, combine all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground allspice, and ground nutmeg. Whisk together until uniformly blended and set aside.
Mix Wet Ingredients
- In a separate bowl, whisk together granulated sugar, vegetable oil, and eggs until well combined. Add apple butter and buttermilk, whisking until smooth and integrated.
Combine and Pour
- Gradually incorporate the dry ingredients into the wet mix, whisking until just combined. Avoid overmixing. Spray a 9x5x2.75-inch loaf pan with non-stick spray and pour the batter into the pan.
Bake the Loaf
- Preheat the oven to 350°F (175°C) and bake for 50 to 60 minutes. Check for doneness with a toothpick inserted into the center; it should come out clean. Allow to cool for 5 to 10 minutes before transferring to a wire rack.
Make the Cream Cheese Frosting
- Combine softened butter and icing sugar in a mixing bowl. Cream together, then add cold cream cheese and mix until thick and creamy. Stir in the additional apple butter until fully combined.
Frost the Loaf
- Once the loaf has cooled, spread the cream cheese frosting generously on top. Garnish with extra apple butter if desired.
Notes
Don’t overmix the batter for a moist loaf. Allow cream cheese to come to room temperature for smoother frosting. Consider adding chopped nuts or raisins for added texture.
