Ingredients

Dough Ingredients
  • 3 cups bread flour Provides the backbone of the dough.
  • 1.25 teaspoons instant dry yeast Helps the dough rise for a light texture.
  • 2 teaspoons kosher salt Enhances flavor and balances sweetness.
  • 1 teaspoon granulated sugar Activates the yeast for better rise.
  • 200 grams sourdough discard (unfed, at room temperature) Adds unique flavor and texture.
  • 3/4 cup warm water Activates the yeast and binds ingredients.
  • 2 Tablespoons olive oil Adds richness and crispiness to the crust.
  • as needed to dust semolina flour Keeps the dough from sticking.

Method

Preparation
  1. In the bowl of a stand mixer fitted with a dough hook, combine the bread flour, yeast, salt, and granulated sugar. Mix until well combined.
  2. Add the sourdough discard. With the mixer set to low speed, gradually pour in ¾ cup of warm water and the olive oil. Increase the speed to medium until a shaggy dough forms.
  3. Transfer the dough to a lightly floured surface, kneading gently for 2-3 minutes until it forms a soft, smooth ball.
  4. Place the kneaded dough into a large oiled bowl, turning it to coat with olive oil. Cover with plastic wrap and let rise until doubled, about 1 hour.
Baking
  1. Preheat the oven to 450°F (230°C). Lightly dust two baking sheets with semolina flour.
  2. Once the dough has risen, transfer it to a floured surface and divide it into two equal pieces. Shape each piece into a round ball and place on the baking sheets. Cover with plastic wrap and let rest for 10 minutes.
  3. Press each dough ball to shape into crusts. If the dough springs back, cover with a towel for 10 minutes before reshaping.
  4. Add your favorite toppings and drizzle with olive oil, then bake for 20-30 minutes until golden and crisp.

Notes

For a more complex flavor, consider adding herbs like oregano or basil. Allowing the dough to rise longer, even overnight in the fridge, enhances flavor.
