Ingredients

Main Ingredients
  • 2 cans petite diced tomatoes (14.5-ounce each), drained Or 1 (28-ounce) can for added richness
  • 1 can tomato sauce (15-ounce) For a deep, savory base
  • 2 large skinless boneless chicken breasts About 1.5 lbs total
  • 1 cup chicken broth Reduced-sodium for a healthier option
  • 1 cup diced yellow onion Aromatic and sweet
  • 1 large green bell pepper, chopped For a fresh crunch
  • 1 can corn (15-ounce), rinsed and drained Or 1 package of frozen corn
  • 1 can black beans (15-ounce), drained and rinsed For a hearty texture
  • 1 jalapeño, minced Remove seeds for milder flavor
  • 1 teaspoon salt To enhance flavors
  • 2 teaspoons dried oregano or Italian seasoning blend For an herbal touch
  • 2 teaspoons chili powder Reduce to 1 teaspoon for milder chili
  • 1 tablespoon ground cumin Warm and earthy flavor
  • 3 cloves garlic, minced Releases robust fragrance
  • 4 ounces cream cheese At room temperature for creamy finish

Method

Preparation
  1. Add all ingredients except for the cream cheese into a 6-quart or larger slow cooker. Stir until well-combined.
  2. Cover the cooker and let the chili bubble on low for 7 hours, or on high for 3 hours.
Post-Cooking
  1. Once cooking time is complete, remove the chicken and shred with two forks, or cut into bite-sized pieces.
  2. Return the shredded chicken to the slow cooker. Add the cream cheese and stir until melted.
  3. Taste and adjust seasoning if necessary, then cook for an additional 10-15 minutes.
Serving
  1. Serve warm topped with fresh cilantro, shredded cheese, or sour cream.
  2. Pair with cornbread or cornbread muffins.

Notes

For added depth of flavor, sear chicken breasts before slow cooking. Customize spice levels by adding more jalapeños or cayenne pepper. For a thicker chili, remove the lid for the last 30 minutes.
