  • 1 1/2 cups freshly grated parmesan cheese Adds savory depth and creamy texture.
  • 1/4 cup fresh flat-leaf parsley, chopped A fresh finishing touch that brightens the dish.
For the Pasta and Chicken
  • 12 oz. rigatoni The perfect pasta choice that captures all that delicious sauce.
  • 2 boneless skinless chicken breasts (about 1 1/2 lb. total) chicken breasts Juicy protein that elevates the meal.

Method

Preparation
  1. In a 6- to 8-quart slow cooker, add the heavy cream, low-sodium chicken broth, cubed butter, kosher salt, black pepper, and finely chopped garlic. Stir to combine.
  2. Place the boneless, skinless chicken breasts into the slow cooker mixture, ensuring they are submerged in the creamy sauce.
Cooking
  1. Cover the slow cooker and cook on low heat for about 3 to 5 hours, or on high for 2 to 3 hours, until the chicken reaches an internal temperature of 165°F.
  2. Once cooked, remove the chicken from the slow cooker and transfer it to a cutting board. Allow it to cool slightly, then slice into bite-sized pieces.
  3. Add the rigatoni directly into the slow cooker, stirring to coat it thoroughly in the sauce. Increase the heat to high, cover, and cook for 25 to 30 minutes, stirring occasionally.
Combining and Serving
  1. Gently stir in the sliced chicken and the freshly grated parmesan cheese, allowing the cheese to melt and enrich the sauce.
  2. Serve topped with chopped parsley, additional parmesan, and a dash of black pepper for extra flavor.

Notes

For extra garlic flavor, sauté the chopped garlic in butter before adding to the slow cooker. Consider mixing in pecorino Romano for a sharper taste or add vegetables like spinach or peas for added nutrition and color.
