Ingredients
Method
Preparation
- Cut the beef into four equal pieces. Season generously with salt and pepper.
- In a heavy-bottomed skillet, heat half of the olive oil over high heat. Add the beef pieces and brown them well on all sides for about 1.5 minutes per side.
Cooking
- Remove the beef from the skillet and set aside on a plate.
- In the same skillet, add a touch more olive oil. Add minced garlic, diced onions, and red capsicum, and sauté until onions are caramelized, about 2 to 3 minutes.
- Pour in 1/2 cup of beef broth, bringing it to a simmer and scraping the bottom to dissolve the brown bits. Simmer for about 30 seconds.
- Transfer the mixture to a slow cooker. Add rinsed kidney beans, crushed tomatoes, tomato paste, remaining beef broth, and all spices. Stir well and lay the seared beef on top.
- Set the slow cooker to low and cook for about 8 hours.
- Once cooked, carefully remove the beef and shred it with two forks. Return the shredded beef to the cooker.
- Mix cornflour with 1/4 cup of beef broth until smooth, pour into the slow cooker, stir to combine, and cook on low for an additional 20 minutes.
- Adjust the seasoning with additional salt and pepper if needed, then serve.
Serving
- Serve with garnishes like sour cream, guacamole, or diced avocado, and pair with cornbread, rice, or corn chips.
Notes
For extra flavor, consider adding jalapeños or adjusting spices. Leftover chili can be refrigerated for up to 4 days or frozen for longer storage.
