Ingredients

For the Grits
  • 2 cups water The foundation of your grits, providing a comforting base.
  • 1/2 cup grits Creamy and smooth, these will become the heart of the dish.
  • 2 teaspoons salt Enhances the natural flavors and brings all the ingredients to life.
  • 1 teaspoon black pepper Adds a subtle warmth and aromatic touch.
  • 1 cup cooked, chopped breakfast sausage Juicy and savory, this will give the dish a delightful meaty texture.
  • 2 ounces shredded extra sharp Cheddar cheese Melty and flavorful, it brings an irresistible cheesy element to the table.
For the Eggs
  • 4 large eggs Fresh, creamy eggs provide richness that perfectly complements the grits.

Method

Preparation
  1. In a medium saucepan, add 2 cups of water and bring it to a vigorous boil over high heat.
  2. Once boiling, stir in the half-cup of grits and reduce the heat to medium-low. Let it simmer gently, stirring occasionally for 20 to 25 minutes or until the grits are tender and creamy.
  3. After the grits have reached the perfect consistency, remove the saucepan from heat. Stir in the chopped breakfast sausage and shredded cheddar cheese until everything is well combined and the cheese is beautifully melted.
  4. In a separate pan, fry or scramble the four large eggs to your liking – sunny-side-up, over-easy, or scrambled.
  5. Divide the creamy grits mixture between two bowls. Top each bowl generously with the cooked eggs. If desired, add more shredded cheese on top for that extra deliciousness. Serve while hot, and enjoy!

Notes

You can add a dash of hot sauce or sprinkle some fresh herbs like chives on top for added dimension. For a bit of crunch, try adding some crispy fried onions or sautéed vegetables alongside the eggs. Experiment with different types of cheese such as Monterey Jack or Gouda for a twist on flavor. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months.
