  • 2 tablespoons extra butter For brushing on top before baking.
  • 1 3/4 cups buttermilk Provides a moist, tender crumb.
  • 3 tablespoons chopped chives Adds a burst of fresh flavor.
For the filling
  • 1 pound breakfast sausage Brings a juicy, savory flavor to the biscuits.
  • 1 1/2 cups sharp cheddar cheese, grated Enhances richness and flavor.

Method

Cooking the sausage
  1. In a large skillet, cook the breakfast sausage over medium heat until browned and crispy, about 5-8 minutes. Use a wooden spoon to break it into crumbles.
  2. Transfer the cooked sausage to a paper towel-lined plate to drain and cool completely.
Preparing the biscuits
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Grate the frozen butter and return it to the freezer to keep it cold.
  3. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Stir in the cooled sausage, grated cheddar cheese, and chopped chives until evenly combined.
  5. Add the frozen butter shreds to the mixture and stir until well incorporated.
  6. Make a well in the center and pour in the buttermilk. Mix gently with a spatula, then use your hands to form a soft dough. Do not over-mix.
  7. Transfer the dough to the prepared baking sheet and shape it into a rectangle about an inch thick.
  8. Cut the dough into 12 squares, ensuring not to separate them.
  9. Brush the tops with the melted butter for a golden finish.
Baking
  1. Bake the biscuits in the preheated oven for 15-20 minutes until golden brown.
  2. Serve warm, either plain, with butter, or topped with eggs.

Notes

For the best texture, work quickly with the cold butter. Consider using more cheddar for a cheesier flavor or adding spices like black pepper or smoked paprika.
