Method

Preparation
  1. Cook the salmon fillets in a skillet with 1 tablespoon of oil and chopped garlic over medium-high heat for about 10 to 12 minutes until they are light pink and flake easily. For canned salmon, just season with salt and pepper without cooking.
  2. Let the cooked salmon rest for 5 minutes before breaking it into small pieces.
Filling the Burritos
  1. Season the salmon pieces with a pinch of sea salt and black pepper and set aside.
  2. In a pot, warm the black beans over medium heat and stir in 1/2 cup of shredded cheese, chopped onions, diced tomatoes, cumin, and chili pepper. Cook for approximately 5 to 10 minutes until the cheese melts and combines with the beans.
Baking
  1. Preheat your oven to 350°F (175°C) and lightly spray a baking dish with oil.
  2. Warm the tortillas in the microwave for about 30 seconds, optionally patting each with butter or olive oil.
  3. For each tortilla, add approximately 1/4 cup of the bean and tomato mixture followed by a smaller amount of the salmon mixture. Roll the tortillas tightly and place them seam-side down in the baking dish.
  4. Spread any remaining bean and tomato mixture over the top and add extra cheese if desired. Cover with foil and bake for 15 minutes, then remove foil and bake for an additional 10 minutes. Optionally, broil for 1 minute for a crispy top.
  5. Drizzle salsa over the top before serving and let it warm in the cooling oven for an additional 5 minutes.

Notes

For extra flavor, consider adding spices like smoked paprika or cilantro to the filling. You can swap beans or cheeses based on your preference. Prepare the filling in advance and refrigerate overnight if desired.
