Ingredients

For the brine
  • 0.5 cup sea salt Foundation for flavor
  • ⅓ cup brown sugar Adds sweetness for caramelization
  • 1.5 liters cold water To dissolve the mixture, approximately 6 cups
  • 4 cloves crushed garlic Infuses rich flavor
  • 3 pieces bay leaves Adds earthy flavor
  • 3 sprigs fresh rosemary For aromatic flavor
  • 3 sprigs fresh thyme Enhances herbal notes
  • 1 teaspoon dried sage Or a few fresh leaves for depth

Method

Preparation
  1. Start by selecting a pot large enough to comfortably hold the chicken and the brine mixture.
  2. In a medium saucepan, combine the sea salt, brown sugar, crushed garlic, bay leaves, rosemary, thyme, and sage. Add 2 cups of cold water and place it over medium heat. Stir gently until the salt and sugar have completely dissolved.
  3. Once fully dissolved, remove the pot from heat and allow it to cool to room temperature.
  4. After the brine has cooled completely, add another 4 cups of cold water to the mixture.
  5. Place your chicken in a large pot or a resealable plastic bag. Pour the brine over the chicken, ensuring it is fully submerged. Seal or cover the pot with a lid, and then place it in the fridge. For best results, allow the chicken to marinate for up to 24 hours.

Notes

Consider experimenting with different herbs or adding citrus peels to the brine. Always taste the brine before adding chicken to adjust flavors. For quicker brining, cut the chicken into smaller pieces.
