Ingredients
Method
Preparation and Crust
- Adjust the oven rack to the lower-middle position and preheat it to 350°F (177°C).
- Pulse the gingersnap cookies until they turn into fine crumbs.
- Mix the cookie crumbs with ground ginger, ground cinnamon, granulated sugar, and melted butter until well combined.
- Firmly press the mixture into the bottom and slightly up the sides of a 9-inch or 10-inch springform pan.
- Pre-bake the crust for 10 minutes, then allow it to cool slightly.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese and granulated sugar together on medium-high speed until smooth and creamy, about 2 minutes.
- Add the sour cream and vanilla extract, beating until well combined.
- Add the eggs one at a time, mixing gently after each addition to prevent over-mixing.
Create the Pumpkin Swirl
- Scoop 2 cups of the cheesecake batter into another bowl.
- Stir in the pumpkin puree, ground cinnamon, and pumpkin pie spice until fully combined.
- Layer spoonfuls of the plain and pumpkin batters alternately over the pre-baked crust.
- Swirl the batters together gently using a toothpick or knife.
Water Bath Method
- Prepare a water bath by boiling a pot of water.
- Ensure you have about 1 inch of water in your roasting pan.
- Place the cheesecake springform pan inside the larger roasting pan and pour in the hot water.
Baking the Cheesecake
- Bake for 55-70 minutes until the edges should be set, but the center should still wobble slightly.
- Tent with aluminum foil halfway through if the top begins to brown too quickly.
Cooling
- After baking, turn off the oven and crack the door open.
- Let the cheesecake cool in the oven for an hour.
- Allow it to cool completely at room temperature before refrigerating for at least 4 hours or overnight.
Serving
- Once chilled, loosen the cheesecake from the sides of the springform pan using a knife, then remove the rim.
- Top with salted caramel and whipped cream, slice, and serve.
- For clean slices, wipe the knife clean and dip it in warm water between cuts.
Notes
Make sure your cream cheese is at room temperature for a smooth batter. Avoid over-beating the mixture after adding eggs to prevent cracks in the cheesecake. Feel free to experiment with different toppings, like chocolate ganache or fresh fruit.
