Ingredients

For the dough
  • 3.5 cups 3 1/2 cups all-purpose flour This will give you that much-needed structure.
  • 1 cup 1 cup pumpkin puree Make sure it’s pure pumpkin puree, not pumpkin pie filling!
  • 1/2 cup 1/2 cup dairy-free milk Warming the milk helps activate the yeast.
  • 1/2 cup 1/2 cup vegan butter Softened vegan butter lends richness and moisture.
  • 2 tablespoons 2 tablespoons granulated sugar Balances flavors and helps with browning.
  • 2.25 teaspoons 2 1/4 teaspoons instant dry yeast For rising the rolls.
  • 1 teaspoon 1 teaspoon pumpkin pie spice (optional) Adds a lovely aroma.
  • pinch Pinch of salt Enhances the flavor (use if vegan butter is unsalted).
For the glaze
  • 1 tablespoon 1 tablespoon maple syrup For a glossy finish on top.
  • 1 tablespoon 1 tablespoon melted vegan butter (or oil or water) To brush on top.

Method

Mixing the Dough
  1. In a large mixing bowl or stand mixer, combine all the dough ingredients, including yeast.
  2. Knead the mixture for 5-10 minutes until the dough is soft and stretchy.
  3. If mixing by hand, combine the ingredients well using a wooden spoon, then knead on a lightly floured surface.
Kneading
  1. Add more flour if the dough is sticky or more milk if too dry to achieve a soft, pliable dough.
First Rise
  1. Place the dough in a greased bowl and cover with a kitchen towel.
  2. Let it rise in a warm spot until doubled in size, about 1 hour or overnight if preferred.
Shaping the Rolls
  1. Punch the risen dough down and divide into 12 equal pieces (approx. 75g each).
  2. Roll each piece into a smooth ball.
Preparing the Baking Dish
  1. Grease a baking dish or line with parchment paper.
  2. Arrange the dough balls in the dish allowing space for them to grow.
Second Rise
  1. Cover the rolls with a kitchen towel and let rise again for about an hour until expanded.
Baking
  1. Preheat the oven to 350°F (180°C).
  2. Bake for 22-28 minutes until golden brown on top.
  3. If browning too quickly, tent with aluminum foil.
Glazing the Rolls
  1. Brush the glaze mixture over the rolls while warm.
  2. Sprinkle with flaked salt or pumpkin seeds if desired.
Serving
  1. Serve warm, slathered with vegan butter, or store for later enjoyment.

Notes

You can prepare the dough in advance; it can rise in the refrigerator overnight for a better flavor. Adjust flour and milk as needed for desired dough consistency.
