  • 1 teaspoon chili powder Adds a lovely kick of heat.
  • 1 packet Sazon Or substitute with 2 teaspoons for herbal flavor.
  • 1 teaspoon salt Essential for enhancing all other flavors.

  • 1 teaspoon pepper For a bit of spice.
  • 1 teaspoon onion powder Balances the flavors beautifully.
  • 0.5 teaspoon cayenne pepper For those who love a spicy punch.
  • 2 teaspoons paprika Adds color and depth of flavor.
  • 4 large eggs Creates a sticky batter for the flour.
  • 0.25 cup cold water Helps thin out the egg mixture.
  • 1 tablespoon hot sauce Gives the chicken a zesty tang.
  • 6-8 cups vegetable oil For frying to ensure even cooking.

Method

Preparation
  1. Preheat your oil to 350°F for optimal crispiness.
  2. In a large bowl, mix the dry ingredients: flour, baking powder, chili powder, Sazon, salt, garlic powder, pepper, onion powder, cayenne pepper, and paprika.
  3. In another bowl, whisk together the eggs, cold water, and hot sauce until well combined.
  4. Take your chicken pieces and thoroughly season them with the prepared spice mix.
  5. Coat each chicken piece in the flour mixture, dip it into the egg batter, and then coat it again in the flour mixture for a crispy finish.
  6. Let the coated chicken rest for about 15 minutes to help the flour adhere better.
Frying
  1. Deep fry the seasoned chicken in the preheated oil for 8-10 minutes, ensuring the internal temperature reaches 165°F.

Notes

For enhanced flavor, consider marinating the chicken in buttermilk overnight. Use an oil thermometer to maintain frying temperature, and fry in batches to avoid overcrowding the pan.
