Ingredients

For the Steak
  • 2 pieces 12-ounce New York strip or ribeye steaks or 4 6-ounce filet mignons, about 1½ inches thick Known for their tenderness and flavor.
  • 1 teaspoon kosher salt For seasoning.
  • 0.5 teaspoon freshly ground black pepper For seasoning.
For Cooking
  • 2 tablespoons vegetable oil For searing the steaks.
  • 1 tablespoon unsalted butter For richness.
  • few sprigs fresh thyme leaves For aroma and flavor.

Method

Preparation
  1. Pat the steaks dry with paper towels to help achieve a desirable crust.
  2. Season the steaks all over with the kosher salt and freshly ground black pepper.
  3. Heat a heavy pan (cast iron or stainless steel) over medium-high heat until very hot.
Cooking
  1. Add the vegetable oil to the hot pan until it shimmers.
  2. Carefully set the steaks into the pan and leave undisturbed for about three minutes.
  3. Check if the steaks release easily, then flip and continue cooking for another three to four minutes for rare to medium-rare.
  4. For medium, extend cooking time to four to five minutes; for well-done, cook for five to six minutes on the second side.
  5. During the final minute of cooking, add the butter and thyme sprigs to the pan.
Serving
  1. Transfer the steaks directly to plates and serve hot, or move to a cutting board, cover with aluminum foil, and let rest for five to ten minutes before slicing.

Notes

Use a meat thermometer for precise doneness: 125°F (rare), 135°F (medium-rare), and 145°F (medium). Allow steaks to rest after cooking for improved juiciness. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for longer storage.
