Method

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the ground turkey, chopped onion, and green pepper to the pot. Sauté for about 7-8 minutes until turkey is cooked through and vegetables are tender.
  3. Add minced garlic and sauté for an additional 30 seconds until fragrant.
Cooking
  1. Pour in the chicken broth, diced tomatoes, and rinsed kidney beans. Add chili powder, cumin, oregano, salt, and black pepper. Bring to a simmer.
  2. Stir in elbow macaroni, raise heat to boil, then reduce to maintain a simmer. Cook for about 12 minutes, stirring occasionally.
  3. Once pasta is tender, stir in one cup of shredded cheddar cheese until melted. Turn off heat, top with remaining cheese, cover, and let sit for 2 minutes.
Serving
  1. Once the cheese is melted, serve immediately with your choice of toppings.

Notes

Consider adding a dash of cayenne pepper for extra spice or using whole-grain macaroni for added fiber. Store leftovers properly in an airtight container.
